Yes, you can run srsRAN on any headless OS. It's just a console application.
You can also run multiple instances at the same time. In fact we are
running dozens of instances containerized on a single physical machine
in our CI/CD pipeline all the time.
If you're running with real RF hardware you might be performance limited
though.
